My favourite bolognese sauce for Spaghetti, Marinara or Lasagne. It came about from trial and error. I like my bolognese sauce a little sweeter and nothing has ever quite got there from recipe lists on the net.


  • 1 tin of dices tomatoes + half a tin of water

  • 1 tbsp of olive oil

  • 2-3 tbsp of tomato paste

  • 2 tbsp of brown sugar

  • 250mls red wine

  • 1 onion chopped

  • 2 eschallots sliced

  • 2 garlic cloves crushed

  • 1 tsp of McCormicks mixed herbs (or whatever herbs you enjoy).


  • 1.

    Use a good non stick medium saucepan

  • 2.

    Add Olive oil, eschallot, garlic and onion.

  • 3.

    Heat over low to medium heat until onion is translucent.

  • 4.

    Add Tomatoes, water and tomatoe paste stir till mixed in well.

  • 5.

    Add Sugar and red wine.

  • 6.

    Simmmer for 20 mins.

  • 7.

    REady to use in a number of dishes
