This recipe is what i cooked for a special lunch when my mother and sister
dropped in and all i had was carrots in the fridge.
I made some home made bagels and the lunch was lovely.
Heat a large pot , add oil and cook onion then carrots , butter and ginger and
Cook for about 2 to 3 mins
Pour in stock and cook until all the carrots
Are soft enough to blend
Pour into blender and blend until smooth.
Salt to taste.
Serve in a large soup bowl with fresh herbs and home made Bagels.
