Pesto is one of the easiest things to make, and a lot of the time better then the store bought stuff… and way more satisfying! I make this using a hand blender.
Blend basil, garlic and pine nuts into a rough cut. Add parmesan cheese.
Slowly add EVOO until a paste eventuates. Add more oil depending on how runny you want the mix.
