Pesto is one of the easiest things to make, and a lot of the time better then the store bought stuff… and way more satisfying! I make this using a hand blender.

  • 1C (packed) basil leaves

  • 3 cloves garlic

  • ½C pine nuts, toasted

  • ½C parmesan cheese, freshly grated

  • 1C EVOO

  • Salt and pepper

  • 1.

Blend basil, garlic and pine nuts into a rough cut. Add parmesan cheese.

  • 2.

Slowly add EVOO until a paste eventuates. Add more oil depending on how runny you want the mix.

  • 3.

    Season well.
