My flatmate founf this one... again, it's my variation. She may have got it from a magazine (I think!)


  • 2 chorizo, slices into half-moon shapes

  • 1 red capsicum, sliced into strips

  • 1/2C mushrooms, sliced

  • 1/2 onion, sliced

  • 1 clove garlic, diced

  • 425g tinned tomatos with herbs

  • Penne pasta

  • Parmesan cheese to serve


  • 1.

    Saute onion and garlic. When translucent, add chorizo and cook.

  • 2.

    Once cooked, and a little brown, add capisum.

  • 3.

    Add tomatos once capsicum have softened. Add mushrooms when tomatoes start rapidly simmering.

  • 4.

    Cook for about 15mins, until vegetables softened. Season well.

  • 5.

    Serve with penne and parmesan,
