Ok, so everyone has heard of the Neiman-Marcus Cookie story... so I tried to make it one day and it's really good! I made some changes (because that's what I do) and here's the end product... a cookie my friends cannot seem to get enough of and that I've been asked to make far too many times!
Beat the butter and sugars until creamy. Add eggs, one at a time, beating until well combined. Add vanilla and mix through.
Place sifted flour, oats, coconut, chocolate, salt baking powder and soda together in a bowl.
Add the wet ingredients to the dry and mix until well combined. You should have a fairly dry mixture that should hold when pressed together.
Roll into balls (about a tablespoon size) and place in the fridge to set for about 30 mins.
Preheat the oven to 180c.
Place cookie balls on a baking sheet about 2.5cm apart. Place into oven for 5 mins.
Pull out of the oven and use a fork to press them down, making a round cookie shape with really nice indentations. Cook for a further 10-12mins or until golden brown.
Continue until all cookies are cooked. Allow to cool before serving (otherwise they are very chewy).
Melt the extra dark chocolate and pipe sparingly over the cookie... nice contrast!
