Delicious & Beautiful. People often here the name of the pie and cringe but it is a fantastic dessert! Beautiful served with double cream.
Sift flours & sugar into a medium bowl, rub in butter. Add enough water to make ingredients cling together. Press dough into ball, need gently on floured surface until smooth. Cover & refrigerate for 30 mins.
Pre-heat oven to 200 degrees. Roll dough on floured surface until large enough to line a 23cm pie plate. Lift pastry into pie plate, ease into sides, trim edge. Use scraps of pastry to make a double edge around the top.
Place pie plate on oven tray, line pastry with baking powder. Fill with dried beans or rice (blind bake). Bake in oven for 10 mins. Remove paper and beans and bake for another 10 mins or until lightly brown. Cool.
Reduce oven temperature to 180 degrees. (Filling) Beat eggs, sugar & maple syrup in a small bowl with an electric mixer until thick. Stir in pumpkin, milk & spices.
Pour filling into pastry case, bake in oven for approximately 50 mins or until set. Cool than lightly dust with extra icing sugar if desired.
