Cheesy spinach quiche wrapped in puff pastry


  • 1 cup grated cheese

  • 1 bunch of chopped spinach

  • 2 tbsp parmasen cheese

  • 2 tbsp finely chopped parsley

  • 1/3 cup olive oil

  • 1 finely diced onion

  • 4 eggs beaten

  • WHITE SAUCE (above ingredients to be mixed into white sauce)

  • 2 tbsp plain flour

  • 2 tbsp butter

  • 2 cups of full cream milk

  • 2 sheets of puff pastry and 1 tbsp milk to brush

  • You will need an oven proof dish approximately 20cm x 20cm

  • Pre- heat oven to 180 degrees

    Chop the spinach and steam until wilted. squeeze water from spinach once cooked.

  • 2.

    Simmer onions and oil in pan until cooked.

  • 3.

    Make white sauce. Melt the butter on low heat in a saucepan. Add flour and mix. Take off heat and sir in milk. Place back on low heat and stir until thickens.

  • 4.

    Add grated cheese, cooked onion, parmesan cheese, parsley and 4 beaten eggs to white sauce and mix in.

  • 5.

    Roll out puff pastry on bench with plain flour. Grease dish wth butter and place 1 sheet in the bottom on the dish, ensure it comes up the sides and over the edges a little.

  • 6.

    5.PLace mix into dish.

  • 7.

    Place remaining puff pastry sheet over the top and pinch together at the edges with the bottom sheet.

  • 8.

    Brush milk lightly over the top of pastry and place in oven heated to 180 degrees for approximately 45 minutes or until lightly brown on top.


When you take it out of the oven, let stand for 10 minutes to set.
