Hashie

A fritata-type slice of potato and veges.

Ingredients

  • 1 medium carrot

  • 1 large zucchini

  • 150 g cabbage

  • 2 large Desiree potatoes

  • 2 rashers bacon

  • .25 cup fresh parsley

  • 1 Tab olive oil

  • 3 eggs

  • 1 cup plain flour

  • 1 tsp vegetable stock powder

  • 200 mLs milk

  • .5 cup grated cheddar

  • 1 cup grated cheddar extra

Method

  • 1.

    Preheat oven to 200C.

  • 2.

    Grease and flour a cm slice tin.

  • 3.

    Peel the carrot and potato. Grate carrot and zucchini and potato. Finely shred the cabbage.

  • 4.

    Roughly chop bacon and parsley.

  • 5.

    Heat oil in a frypan over medium high heat and pan-fry the bacon.

  • 6.

    Place all ingredients except the extra cheddar in a large bowl and combine.

  • 7.

    Pour into the prepared slice tin and top with remaining cheese.

  • 8.

    Bake for 35-40 minutes or until golden and firm.

Notes

My daughter named this recipe - because it was a bit like a hash brown she thought it should be called 'hashie'. It's a great way to hide some veges!

** Salami, ham or pancetta can be substituted for bacon
