A fritata-type slice of potato and veges.
Preheat oven to 200C.
Grease and flour a cm slice tin.
Peel the carrot and potato. Grate carrot and zucchini and potato. Finely shred the cabbage.
Roughly chop bacon and parsley.
Heat oil in a frypan over medium high heat and pan-fry the bacon.
Place all ingredients except the extra cheddar in a large bowl and combine.
Pour into the prepared slice tin and top with remaining cheese.
Bake for 35-40 minutes or until golden and firm.
