A crumbly short crust pastry case filled with tuna, sweet corn, onions, tasty cheese and beaten eggs makes this recipe a great dish for lunch.
Whisk up the eggs, cream, seasonings and spring onions in a large bowl.
Then add the tuna, cheese and corn. Mix until well combined.
Heat a little oil in a non-stick pan. Add the egg mixture, cover and gently cook for about 12-15 mins until just set and a crust has formed around the edge.
Serve cut into wedges with a simple green salad on the side.
