Wash, trim and core the cauliflower.
Steam or boil in until fork tender. Drain well.
Combine mayonnaise, mustard and minced onion in a separate bowl.
Put into a baking dish and spread combined mixture over cauliflower.
Sprinkle with a generous amount of shredded tasty Cheddar cheese.
Bake uncovered, in oven until the cheese is golden.
