The first time I tasted this Omelette was at my Thai friend's. This omelette goes well to eat with papaya salad
Mix the garlic, onion, chillies, coriander leaves, fish sauce and lime juice in a bowl then pour in the eggs, stir to combine
Heat the oil in a heavy base frying pan
Pour in the egg mixture
Cook over medium heat until the egg is golden brown
