Oven cooking. Takes about 1 1/2 hrs until finished but with little work. Kids love it. No veg but you can add your own to the plate steamed green beans would be lovely if your kids dont mind green stuff on their plate. Very cheap to make. Enough to feed hungry hoards.


  • 3 cups uncooked Rice

  • 2 1/2 lbs Chicken cut into 2" pieces ( breast or thigh fillets)

  • Salt and Pepper or Veg Salt

  • 1 1/2 cups Milk

  • 1 cup Heavy Cream

  • 4 cups Chicken Stock hot

  • Butter


  • 1.

    Grease a 3 quart casserole dish with lid.

  • 2.

    Spread 1 1/2 cups rice on bottom.

  • 3.

    Arrange chicken pieces over rice.

  • 4.

    Sprinkle with salt and pepper.

  • 5.

    In a pan bring to just boil the milk, cream and 2 cups stock.

  • 6.

    Pour over chicken.

  • 7.

    Spread 1 1/2 cups of rice over chicken.

  • 8.

    Dot with butter bake uncovered for 15 minutes.

  • 9.

    Pour 1 cup hot stock over bake uncovered for 30 minutes.

  • 10.

    Pour 1 cup hot stock over bake uncovered for 15 minutes.

  • 11.

    Remove from oven cover with lid and let rest for 20 minutes.

  • 12.

    Use mod oven temp.

What an easy recipe! This sounds like American homestyle cookery in it's simplicity and measurements. It would make a great base to add your own touch and eperiment with herbs and spices, vegies or perhaps even nuts. Thankyou for posting this - it's given me a great idea for dinner tonight!
