This recipe is about the simplicity and quality of ingredients – sometimes nature’s best doesn’t need a recipe


  • 2 lbs heirloom or peak-season tomatoes

  • drizzle good quality extra virgin olive oil

  • fine quality sea salt

  • freshly ground black pepper


  • 1.

    Slice tomatoes and arrange on a platter. Drizzle with olive oil and sprinkle with salt & pepper. Serve at room temperature.
