Makes about 6 cups


  • 4 cups peeled and diced fresh peaches

  • 1/2 cup superfine sugar (fruit sugar)

  • 2 tbsp lemon juice

  • 1 tsp vanilla extract

  • 2 cups yoghurt

  • 3/4 cup whipping cream, whipped to soft peaks

    Purée peaches in a blender until smooth. Blend in sugar, lemon juice and vanilla until sugar has dissolved. In a separate bowl, stir yogurt to smooth and whisk in peach purée. Fold I nwhippewd cream and process in an ice cream maker following manufacturer’s instructions. Scrape frozen yogurt into a non-reactive container and freeze until firm, at least 3 hours.

Hi Aimi - after all the ingredients are mixed into one bowl, try placing it in a plastic container with a lid and putting it in the freezer until it is frozen around the edges but still soft in the middle. Take it out of the freezer and scrape the mixture into a mixmaster or use a handmixer and beat the mixture again until it is smooth, then put back into the container and back into the freezer and freeze overnight. Hopefully this should work. re-beating it after you put it in the freezer just helps to reduce the size of the ice crystals forming in the mixture.
