Makes 4 cups (1 L)


  • 1 ½ cups sugar

  • 2 ½ cups water

  • 1 bunch fresh mint (about ¾ cup (190 mL), plus extra for garnish

  • 1 cup fresh lime juice

    Bring sugar, water and mint, slowly up to a simmer. As soon as a simmer is reached, remove from heat, strain, and let cool to room temperature. Stir in lime juice and serve over ice, garnished with fresh mint.
