A delicious baked rice recipe for the family.
Preheat oven to 160C.
Place a large saucepan over medium heat and add milk, cream, sugar, vanilla and orange zest. Stir regularly and bring to the boil.
When the milk has just boiled pour mixture into an oven proof baking dish.
Place baking dish into a high-sided roasting tray and pour in enough hot water to come half way up the baking dish. It is easier to do this on the oven shelf than try to move the roasting dish full of water into the oven.
Grate fresh nutmeg over the top of the rice dish and bake for 1 ½ to 2 hours stirring occasionally during the first hour.
