Turkey Chops with Caper Sauce

Ingredients

  • Turkey Chops with Caper Sauce

  • 4 Fresh Turkey Thigh Chops trimmed of skin and visible fat

  • 2 tablespoons Olive Oil

  • 1 Red Onion finely diced

  • 2 red capsicums finely diced

  • 2 tablespoons Capers

  • 10 basil leaves

  • 0.25 cup Flat-leaf parsley roughly chopped

  • 0.25 cup white wine

  • 4 cups steamed Zucchinis

  • 3 cups Mashed Potatoes

Method

  • Turkey Chops with Caper Sauce:

  • 1.

    Heat 1 tablespoon of olive oil in a pan and add the onion and diced capsicum.

  • 2.

    Cook for 7 minutes or until the capsicum and onion are soft.

  • 3.

    Add the white wine and simmer for a few minutes.

  • 4.

    Spoon the capsicum and onion from the pan and place them into a small bowl.

  • 5.

    Stir the capers and herbs into the capsicum and onion mixture and season according to taste.

  • 6.

    Return the pan to a medium heat and add 1 tablespoon of olive oil.

  • 7.

    Add the turkey chops and cook them for 4 minutes on one side before turning them over and cooking them for a further 4 minutes.

  • 8.

    Serve the turkey chops with mashed potato, steamed zucchinis and a spoonful of the capsicum sauce.
