Turkey Chops with Caper Sauce:
Heat 1 tablespoon of olive oil in a pan and add the onion and diced capsicum.
Cook for 7 minutes or until the capsicum and onion are soft.
Add the white wine and simmer for a few minutes.
Spoon the capsicum and onion from the pan and place them into a small bowl.
Stir the capers and herbs into the capsicum and onion mixture and season according to taste.
Return the pan to a medium heat and add 1 tablespoon of olive oil.
Add the turkey chops and cook them for 4 minutes on one side before turning them over and cooking them for a further 4 minutes.
Serve the turkey chops with mashed potato, steamed zucchinis and a spoonful of the capsicum sauce.
