Preheat oven to 180C.
Rub flour and butter together with your fingers.
Add sugar and massage to make a dough.
Wrap dough in plastic and place in fridge to rest for 30 minutes.
Roll out dough onto a lightly floured benchtop.
Using a cookie cutter cut dough into shapes.
Dust lightly with caster sugar and bake for 20 minutes.
For chocolate shortbread replace 40g of flour with 40g cocoa.
