  • 8-10 large roaster potatoes, peeled and cut into large chunks

  • 4 tablespoons olive oil

  • Sea salt and freshly ground black pepper


  • 1.

    Preheat the oven to 200C (400 F/ Gas Mark 6).

  • 2.

    Bring a pan of salted water to the boil and cook the potatoes for 6-8 minutes until partially cooked. Drain well and transfer to a roasting tray.

  • 3.

    Toss the potatoes with the oil and plenty of seasoning. Roast for 45 minutes to 1 hour, basting and tossing occasionally, until crisp and golden.
