Perfect for cold nights, this is a simple meal that will warm you up from the inside out. Adaptable according to whatever veggies you have in your fridge, every time you make it will be different, but you can’t really go wrong.
Heat ghee to a large pot over a medium heat
Add the garlic, onion, vegetables, dried herbs and bay and cook slowly for about 15 minutes, or until the vegetables have softened, stirring occasionally
Add the cannellini beans and tinned tomatoes then pour in the broth and stir well
Cover with a lid and bring everything slowly to the boil, then simmer for about 30 minutes, or until the vegetables are cooked through
Season with salt and pepper
Garnish with chopped nuts or seeds or grated parmesan cheese
