These are a chewy version of butter cookies that are rolled in cinnamon sugar before they are baked. They melt in your mouth and fill the kitchen with the delicious smell of butter and cinnamon as they cook. As a result, only 5 were left by the time I got the camera out - and they're mine!
Preheat oven to 180 C
Prepare baking sheets by lining with baking paper.
In a large bowl, mix flour, cream of tartar, baking powder and salt. Set aside.
Beat butter until creamy.
Add sugar and continue beating until fluffy. Scrape bowl.
Add eggs one at a time and mix well.
On low-medium speed, mix in dry ingredients two cups at a time. Beat well.
Chill the dough for 30-60 minutes.
In another bowl, mix 1/2 cup sugar and cinnamon together.
Roll dough into large or small balls and coat completely in cinnamon sugar.
Place on prepared baking sheets, leaving room for the cookies to spread.
Bake for 15 minutes or until the outside of cookies feel slightly firm to the touch.
Remove and cool on racks before storing in an airtight container.
