This simple and elegant vinaigrette goes perfectly with a plate of fresh oysters.


  • 12 rock Oysters

  • 2 tablespoons mirin

  • 2 tablespoons sherry vinegar

  • 1 teaspoon chopped shallot

  • 1 teaspoon chopped Ginger


  • 1.

    Mix all the ingredients together except the oysters and place into a dipping sauce bowl

  • 2.

    Serve the oysters over crushed ice.

  • 3.

    Garnish with rose petals, watercress and lemon wedges
