French Toast with Caramelised Bananas and Crispy Bacon

This is a family favourite. It's on the left side of the plate. Imagine a mouthful of French Toast, caramely hot banana and crispy bacon smothered in sticky Maple Syrup - MMMMMMMM


  • French Toast:

  • 1Loaf uncut white bread - cut into 1 inch slices

  • 8 Eggs

  • 750ml Milk

  • 2 tspn Vanilla

  • 1/2 cup Caster Sugar

  • Caramelised Bananas:

  • 6 Bananas

  • 100 gm Butter

  • 1/2 cup Caster Sugar

  • 6 Rindless Middle Rashers Bacon

  • Extra butter for cooking Toast

  • Maple Syrup


  • 1.

    In a bowl combine the eggs, milk, vanilla and sugar.

  • 2.

    Dip each piece of bread in egg mixture and lay in a baking dish. Repeat til all bread is dipped.

  • 3.

    Pour any left over egg mixture over the bread and set aside for 1/2 hour to soak through.

  • 4.

    Cut bananas into thirds on an angle then cut each down the middle.

  • 5.

    Melt butter in a large frypan til sizzling.

  • 6.

    Add banana pieces and toss around for a minute.

  • 7.

    Add the sugar and toss occassionally til bananas have some golden bits but haven't gone mushy - remove and set aside in a warm place.

  • 8.

    Wipe the frypan and put back on the heat.

  • 9.

    Cut rashers in thirds and fry til crispy - remove and keep warm.

  • 10.

    Turn heat to medium /high.

  • 11.

    Melt extra butter in pan and fry each piece of bread til golden brown on each side.

  • 12.

    Serve each piece of Toast with slices of banana, pieces of bacon and a good smothering of maple syrup
