  • 12 Oysters

  • 3 tablespoons chopped pancetta, prosciutto or Bacon

  • 1 tablespoon goats curd

  • 1 tablespoon chopped semi-dried tomatoes

  • 3 tablespoons aged Balsamic vinegar

  • 4 julienne basil leaves

  • 2 cups Rock salt

  • sea salt if needed

  • cracked Black pepper


  • 1.

    Place the oysters on a bed of rock salt in a baking tray

  • 2.

    Place the goats cheese, tomatoes, basil & pancetta onto the oysters

  • 3.

    Drizzle with balsamic vinegar

  • 4.

    Place under the grill until the bacon is nice and cooked and serve with cracked pepper
