Heat a char-grill plate or bbq.
Toss the eggplant, zucchini and capsicum with a little olive oil and salt and pepper.
Place on char-grill and cook until char lines appear on each side and the vegetables are cooked through.
Allow to cool.
Place buffalo mozzarella over one side of the foccacia, stack with char-grilled vegetables and top with a little rocket.
Char-grilling can be done in advance and stored in the fridge. Alternatively you can purchase char-grilled vegetables from a good deli.
