Chomp on this great vegetarian sandwich made with eggplant, mozzarella, capsicum and zucchini layered between slices of herby focaccia.


  • 1 foccacia

  • Eggplant, finely sliced lengthways

  • Capsicum, sliced into large strips

  • Zucchini, finely sliced lengthways

  • Buffalo mozzarella, sliced

  • Rocket


  • 1.

    Heat a char-grill plate or bbq.

  • 2.

    Toss the eggplant, zucchini and capsicum with a little olive oil and salt and pepper.

  • 3.

    Place on char-grill and cook until char lines appear on each side and the vegetables are cooked through.

  • 4.

    Allow to cool.

  • 5.

    Place buffalo mozzarella over one side of the foccacia, stack with char-grilled vegetables and top with a little rocket.


Char-grilling can be done in advance and stored in the fridge. Alternatively you can purchase char-grilled vegetables from a good deli.
