Spanish Omelette


  • 500g potatoes

  • 4 eggs

  • 2 tbs. extra virgin olive oil

  • 1 onion, grated


  • 1.

    Peel the potatoes, wash them thoroughly and cut into thin slices, season with sea salt.

  • 2.

    Heat oil in a frying pan and add the salted potatoes. Stir them until they are slightly browned.

  • 3.

    Add the onion and let it fry for 3 or 4 minutes.

  • 4.

    Beat the eggs and add the fried potatoes. Mix well. Cook them on high heat. Brown on one side and then turn, to brown the other.
