Quick Scrambled Eggs

Scrambled Eggs with Semi-Dried Tomatoes and Fetta

Ingredients

  • 3 Large Eggs

  • 1 Tbs roughly chopped, semi-dried tomatoes

  • 1 Tbs cream

  • 2 - 3 Tbs crumbled fetta cheese

  • Salt & Pepper to taste

Method

  • 1.

    Heat a non stick frypan over high heat.

  • 2.

    Lightly beat the eggs and cream together.

  • 3.

    Mix in the Semi-Dried Tomatoes

  • 4.

    Once the pan is hot, chuck in the beaten egg mix and stir like hell for about 30 - 40 seconds. As egg firms up, bung in the crumbled fetta.

  • 5.

    Take pan off heat and bung scrambled eggs on a plate.

  • 6.

    Now season it. If you bung in the salt before you cook it, it will bugger up the eggs.

Notes

Serves 1

Serve with thick toast or an english muffin.
