This one-pan meal of roasted Portuguese chicken with crispy potatoes is full of delicious deep smoky flavours. Best served with a green salad

Ingredients

  • 1 whole free-range or organic chicken

  • 500g Dutch cream potatoes (or similar), washed and sliced in to wedges

  • Lemon wedges, to serve

  • Marinade 

  • 2 Tbsp smoked paprika

  • 1 tsp dried chilli flakes *optional

  • 6 cloves garlic

  • 1 Tbsp sea salt

  • 1 tsp ground coriander

  • 1 Tbsp red wine vinegar

  • Juice of 1 lemon

  • ¼ cup olive oil

Method

  • 1.

    Pre-heat the oven to 220'C

  • 2.

    To butterfly your chicken: rinse inside and out, removing innards and pat dry. Place on a cutting board, breast down and using a sharp kitchen scissors, cut along both sides of the spine, remove and discard. Turn the chicken over, and placing your hand on the breast bone, press down hard with the palm of your hand, to flatten

  • 3.

    To make the marinade: blend all the marinate ingredients in a food processor until you have a paste

  • 4.

    Place your potatoes in a baking tray and sprinkle with a generous amount of salt

  • 5.

    Brush all sides and crevasses of the chicken with the marinade, coating fairly heavily (you’ll add more marinade during cooking)

  • 6.

    Place chicken, skin side down on the potatoes and place in the oven

  • 7.

    Turn chicken over after 15 minutes, and place back in the oven. After 10 to 15 minutes, brush more marinade all over the chicken on the skin side, really lathering it up. Return to the oven and bake until cooked through another 15 to 20 minutes

  • 8.

    Remove chicken when done and let rest 5-10 minutes before serving with potatoes and lemon wedges

I think that this recipe isn't the one I'm looking for, probably what I expect is having the one that Portuguese Chicken in Australia sells in Sydney next to Brighton Le Sands, if you know the recipe please send it to me, thanks
