Asparagus with poached egg, Parmesan and burnt butter


  • 1 bunch asparagus

  • 1 poached Egg

  • shaved Parmesan

  • 1 tablespoon Butter

  • sea salt

  • cracked pepper

  • 1 teaspoon minced Garlic

  • Lemon Juice

  • 1 teaspoon chopped Parsley

  • toasted crusty bread


  • 1.

    Boil the asparagus in salted water until just cooked

  • 2.

    Heat the butter in a pan until it starts to turn a nut brown colour

  • 3.

    Add in the garlic, parsley, asparagus, lemon juice, salt & pepper

  • 4.

    Pour onto your plate top with your warm poached egg

  • 5.

    Place on top your shaved parmesan, drizzle with truffle oil & serve with toasted crusty bread


Truffle oil not essential but adds a lovely flavour to the dish
