Literally translated as ‘English soup’, an Italian cold pudding, similar to the English trifle, which is so smothered in custard that it looks like a soup. It is made with macaroons or sponge cake moistened with Marsala or rum, layered with custard, whipped cream and glacé fruit or toasted almonds. In some regions, melted chocolate may be folded through part of the custard for variation, while in others, it is topped with meringue. It is served chilled after refrigeration for several hours.
