A rhizome found growing in India and Southeast Asia, which bears a resemblance to turmeric (to which it is related) and ginger. The flesh is hard and orange and has a gingery mango flavour and musky aroma. Zedoary is sold fresh or dried (pictured) and is commonly used in Indian pickles. High in starch, the rhizomes may also be used to make a starch used in Indian cooking as a thickening agent. It is thought to purify the blood.
