Welsh Rabbit

There are many variations of this dish, and controversy pertaining to both its name and its exact ingredients is ongoing, but it is essentially a mixture of a cheesy white sauce or grated cheese, mixed with butter, mustard or Worcestershire sauce and beer or wine. The mixture may be grilled on toast or pre–melted and poured over toast. The question ‘why a rabbit?’ has never been answered satisfactorily, but reminds one of the Marx Brothers’ question, ‘why a duck?’. The alternative name, ‘Welsh rarebit’ was, perhaps, invented for those confused by the inexplicable rabbit.
