Vacherin is a speciality of Alsace, and is a cold dessert or cake consisting of several crisp meringue discs, layered with glacé or fresh fruit, whipped cream or ice cream. It is often highly decorated with piped whipped cream and crystallized flowers. Some vacherins are made from a solid base of meringue, which is then stacked with meringue rings and filled in the middle. The name of this dessert comes from a Swiss cheese of the same name, which it is thought to resemble.
