Salted, dried roe, traditionally from the grey mullet, but now usually from cod or carp. Tarama is probably best known as the main ingredient of taramosalata, a creamy dip, popular in Greek and Turkish meze. The strongly flavoured tarama is pounded with bread, oil, lemon juice and sometimes onion, parsley or dill. Tarama is sold as whole roes from fishmongers. Taramosalata can be purchased ready–made and is usually dyed pink.
