A Middle Eastern salad of fine burghul mixed with tomatoes, onions, mint and parsley. Olive oil and lemon juice add moisture and flavour. Tabbouleh is typically served with baby cos lettuce leaves used to scoop it up with or as a salad accompaniment to meat dishes. The ‘greenness’ varies as some recipes use larger amounts of herbs.
