A deep–fried Indian pastry filled with spicy meat or with vegetables such as lentils, potatoes, peas and herbs, usually accompanied by a spicy chutney. Samosas may be triangular, circular or cone shaped. The pastry is traditionally made from fine wheat flour, ghee and sour milk or yoghurt. Sweet versions may be filled with nuts, dried fruit and spices. They are eaten as snacks, or before a meal.
