A root vegetable shaped like a long carrot, which has a brown skin and creamy flesh. Salsify has a waxy texture and is often served hot with butter, cold with a vinaigrette or used in soups and stews. To use, scrub the root clean, then boil or steam whole until tender. The skins can then be rubbed off and the flesh cut as required. When peeled, keep in water with a squeeze of lemon juice to stop it oxidizing.
