A classic French biscuit, delicate and crumbly with a sandy texture, made from a buttery dough formed into a roll, then chilled and thinly sliced into rounds and baked. Sablés can be flavoured with ground nuts, such as almonds or hazelnuts; lemon or orange rind; or sprinkled with cinnamon and sugar. They can be presented dipped in chocolate or sandwiched with jam and sprinkled with icing sugar.
