Eaten by the people of Sweden, Finland and Russia, where the reindeer lives in the wild. It has a slightly gamey taste, and can be cooked in a multitude of ways, making a good stew or soup, and is delicious smoked. As reindeer has quite a pronounced flavour, it needs little extra seasoning and is most commonly spiced with black pepper, allspice and bay leaves. The tongue may be made into pâté or smoked.
