Small summer berries used in both savoury and sweet dishes, which, although tart, can be eaten raw, but are best when mixed with other fruit. They are more commonly cooked in jams, jellies and sauces. Redcurrants are a traditional ingredient in summer pudding. They are often sold still attached to the stalk, and the easiest way to remove this is to slide the tines of a fork down either side of the stalk, popping off the berries on either side.
