An iced dessert made from fresh cream, which makes it very smooth. The base of a parfait is an egg custard to which cream and flavourings such as coffee (its traditional flavour), alcohol, fruit or chocolate are added. The mixture is poured into a loaf tin or the traditional parfait tin, which is cylindrical in shape with a rounded end. When frozen, the parfait is turned out and sliced. An American parfait is similar to an ice–cream sundae.
