A Tuscan summer salad made with day– old bread to which tomatoes, red onions, cucumber and basil leaves are added. Panzanella comes in many guises with some recipes adding anchovies, tuna, hard–boiled eggs and capers. Traditional recipes soak the bread in water for a few minutes, then squeeze the water out before adding the rest of the ingredients; some modern versions soak the bread in a tomato–based dressing made from a mixture of tomato juice and olive oil.
