Siena’s best–known export, panforte is a rich Italian flat bread or cake whose name translates as ‘hard bread’. Traditionally panforte is made with candied pumpkin (although today, the pumpkin is usually replaced with candied citrus peel), nuts, honey and spices such as coriander seeds, cloves, cinnamon and nutmeg. Its origins can be traced back to the twelfth or thirteenth century. Panforte can be made at home but is also produced commercially worldwide.
