A pancake can be one of many things. Some are large and crêpe–like, made from a thin batter of water, flour and eggs, and often served sprinkled with lemon juice and sugar or folded or rolled around a filling of ice cream, fruit or a savoury mixture. Others are more like drop scones, made from a thick batter and served in a stack with maple syrup. Pancakes are traditionally served on Shrove Tuesday to celebrate renewal, family life and hopes for future good fortune and happiness.
