There are many versions, perhaps the most typical being a savoury French omelette made from lightly beaten eggs, cooked in a frying pan until just firm. Some omelettes are folded around fillings like cheese, ham, tomatoes or mushrooms; others have flavourings like herbs, cooked spinach or bacon mixed in with the raw eggs. Sweet omelettes are usually filled with poached fruits or jam, sprinkled with sugar and then glazed in the oven or under the grill.
