Mastic

A resin collected from bushes related to the pistachio on the Greek Island of Chios. It has an earthy, aromatic flavour and is used for flavouring Turkish delight, ice cream and in a Greek liqueur called mastika. It is also used in Egyptian and Moroccan cuisine. It was probably the original chewing gum, and the source of the verb ‘masticate’.
