A clear brandy distilled from fermented black cherries. The brandy has a bitter almond flavour and is used in gateaux and desserts like Black Forest gateau and cherries jubilee, as well as to flavour cheese fondues. Cherries jubilee is made using pitted cherries, sugar and kirsch, and is flambéed with kirsch before serving.
