A milky drink of water with ground rice, almonds (pictured) or most especially, chufas. Chufa (sometimes called tiger nuts, although they are not a nut at all), are the small, dried chestnut–flavoured tubers of an African plant. Horchata is usually served chilled in summer and sweetened or spiced with cinnamon. The drink is popular in Mexico and Spain, especially in Valencia where chufas are grown. It is increasingly being used as a dairy–free health drink.
