Goat

An important source of meat in Africa, the Middle East, the Caribbean, Spain and Italy, goats are also bred for their milk, which is usually made into cheese. In Indian cooking, goat is curried; in Italy, it may be roasted like lamb with garlic and rosemary. Young kid is considered a delicacy in Mediterranean countries. To bring out its rich flavour, goat should be braised or stewed as it can be tough and stringy.
