Gazpacho

A Spanish vegetable soup characteristically served chilled. Recipes vary, but it is usually made with puréed tomatoes, peppers, cucumber, onions, olive oil, vinegar and bread. It was originally made by field workers who pounded their bread and oil rations with water and salt and added whatever vegetables were available to the resulting soup. ‘Gazpacho’ is Arabic in origin and means ‘soaked bread’.
